Join us in the Main Dining Room for an evening of whisky and food hosted by Ross Blainey, from Glenfiddich.

Sip Glenfiddich 18YO, 21YO, and 23YO Grand Cru, paired perfectly with each course – from entrée to dessert – all against the backdrop of Bondi Beach.

CANAPES 
Chicken liver parfait, orange jelly, nashi pear, pickled onion  
Caramelised onion and raw beef tartlet, ricotta salata 
Glenfiddich 12yo apple and cucumber soda highball

ENTREE 
Pepperberry wood chip smoked ora king salmon tartare, scallions, capers, nasturtium, crostoli crisp
Apricot penicillin, Glenfiddich 18yo, lemon juice, apricot brandy, wattleseed, honey and ginger syrup, smoky mist

MAIN COURSE 
Dry aged duck, celeriac, honey and white pepper glaze 
Butter lettuce, bulls blood, rocket, lemon vinaigrette 
Raisin old fashioned, Glenfiddich 21yo, creme de cacao, pedro ximenez, chocolate

DESSERT 
Choux bun, hazelnut mousse, smoked apple, whisky caramel whip, vanilla ice cream
